Cursed Heirloom: PX Sherry Casks
Cursed Heirloom: PX Sherry Casks
Spontaneous Beer Aged in PX Sherry Casks
Technical
A blend of 3-, 2-, and 1-Year Méthode Traditionnelle spontaneous beer. All Colorado-grown ingredients were used in the brewing process. The mature component was aged one year in Pedro Ximénez Sherry casks. Young spontaneous beer was used to fuel bottle refermentation in this blend.
Flavor Notes
This beer showcases flavor characteristics more akin to Sherry-cask aged Scotches than many beers, presenting a big nose of tar, tobacco, leather and burnt raisin with a drying tannic sensation on the tongue. Smoke, overturned earth, and wood linger on the palate, begging for contemplation and an ostentatious smoking jacket. Assertively dry and oaky with restrained carbonation and moderate volatile acidity, this beer benefits from “opening up” for an hour in your favorite cursed family decanter... we all have those, right?
