Golden Blend - Four-Year Assemblage of Primitive Beer

Consuming Time is a resplendent multi-year ensemble with a weighted average age >34 months at bottling, including our favorite beers from the 19|20, 20|21, and 21|22 brew season, conditioned with young spontaneous beer from the 23|24 season. We specifically selected to blend barrels from batches that utilized high hopping rates and extra long marathon boils (>12hrs boil time) to promote greater caramelization of our wort.

Flavor Notes

Balanced towards bitterness, Consuming Time showcases carmelization flavors of burnt honey, toasted orange peel, and toffee, which meld seamlessly with stonefruit fermentative notes reminiscent of apricots and cherries. Sweeter and fruit-forward aspects of the bouqet form a rich tapestry upon an oak canvas that embraces aromas of earthy vanilla and hay-filled root cellar. Maintaining a restrained acidity and pleasant tannic structure, Consuming Time is ready for enjoyment now but is designed to age gracefully for many years to come!
